Hey guys! Guess what? I’m declaring today Pizza Thursday!

I mean, come on—isn’t Thursday almost as thrilling as Friday?

It’s like those last few hours of high school before summer break (okay, maybe that’s a little dramatic). But the excitement is real!

So, I’ve decided pizza is totally a Thursday kind of meal.

It’s basically the ultimate weekend hype-builder.

Like a little preview of the fun to come.

Can’t you feel it building up?

Building… building… building… Bam!

Pizza time!

Wow, no clue where that came from.

That was as cheesy as this pizza—which, by the way, might have too much cheese.

Wait, is that even possible? Nah, probably not. But for the photos, I totally buried the artichokes under cheese. Oh well, you get it—pizza needs loads of cheese!

Here’s the deal: I spent 45 minutes going back and forth between two pizzas.

Seriously, my brain kept flipping from one to the other, then back again. I just couldn’t decide! Finally, my head started hurting, so I resorted to Eeny, meeny, miny, moe.

You know how it goes!

Yep, apparently I’m a four-year-old at heart.

Anyway, this pizza is super simple! Garlic-infused oil, spinach, marinated artichokes, mozzarella, blue cheese (or feta—because some people gasp don’t like blue cheese), basil, and pine nuts. It’s basically spinach-artichoke dip, minus the cream cheese and plus some blue cheese.

Lately, I’m obsessed with skillet-cooked pizzas ever since making this insanely good Green Olive Pesto Pizza with Feta Cheese Stuffed Crust (seriously, the crust is next-level). But if skillet pizza isn’t your thing, no worries—just bake it in the oven (though it’ll take longer). Whatever you do, make this pizza. The flavors are perfect, and it’s cheesy, bready, delicious perfection!
