Crispy Parmesan and Pesto Egg in a Bagel. A tasty spin on the classic bagel sandwich that might just be even better. Think crispy parmesan cheese, fresh basil pesto, seeded bagels, and sunny-side-up eggs cooked just right. Top it off with avocado and herbs, and you’ve got an amazing breakfast for any day of the week.


Guess what? We’ve got a breakfast recipe for you—and it’s seriously good. Honestly, I don’t know why I hardly ever share savory breakfast ideas like this. It’s kind of silly because breakfast food is so good.

I do the same thing with appetizers. Maybe it’s because I’m usually cooking for a crowd, and they’re expecting dinner—not exactly a breakfast-for-dinner situation (even though that’s totally delicious). So I mostly stick to dinner recipes, which I naturally share here.

But today? We’re switching things up…breakfast it is!

The Details

Let me break this bagel down for you. First, there’s a crispy parmesan cheese layer on the bottom (like a cheesy, crunchy cracker). Then comes a smear of basil pesto (I like mine with a little kick). Next, the toasted bagel (sesame seed is my go-to). And right in the middle? That perfect egg. Finish it all off with an herby avocado salad.

Oh, and my family always adds hot sauce—no surprise there.

Start with the bagel. Try to pick one with a decent-sized hole in the center. If it’s too small, just gently stretch it a bit with your fingers.

Now, the cheese—sprinkle it onto a hot skillet. As it melts and crisps up, it turns into this thin, crunchy layer. So good! Fancy name alert: this is called Frico. It’s often used in salads, which is also a great idea.

Next, spoon some basil pesto over the cheese, then place the bagel on top. For the pesto, I prefer homemade. Mine’s just basil, arugula, toasted nuts, parmesan, and olive oil. Oh, and I toss in a jalapeño for heat. Blend it all up in the food processor.

After the pesto, add the bagel, crack an egg into the hole, and let it cook.

The Herby Avocado Salad

I had to include avocado in this dish. Avocados, eggs, and toast just belong together—you can’t have one without the others.

I mix fresh herbs, diced avocado, lemon, and chili flakes. Serve it on the side or pile it right on top of your bagel.

This is the ultimate breakfast bagel, and surprisingly, it’s super quick and easy. The crispy cheese adds an awesome crunch and flavor, while the pesto keeps things fresh and pairs perfectly with that runny yolk and toasted bagel.

So good. Perfect for weekends, but simple enough for busy mornings too.
